Meet Miguel Solis, the Culinary Nutrition Specialist for the Cleveland Indians.  He works inside Progressive Field in the clubhouse kitchen.  That’s where he cooks three meals a day for all the Cleveland Indian baseball players.  All the players including, Mike Napoli, Carlos Santana and Jason Kipnis, trust and rely on Miguel for all their nutritional needs.  If they have a question or concern about their diet, they turn to Miguel to guide them.

Day-in-the-life of a culinary nutritionist

Game days can be long for Miguel and his team.  They start as early at 8:30 in the morning and can go as late as midnight, depending on how late a game goes.  For every game day, Miguel sets up a food line that may include a pasta bar, stir fry bar, lasagna, linguini, salmon, four different salads and special orders from the players. After each game, Miguel has post-game smoothies available for the team.

Non-game days are more relaxed for Miguel.  He usually works from 10am-3pm.  Those days are mostly spent taking care of the players who are in rehab.  He is responsible for making sure they eat what they are supposed to, that they have an adequate diet and aren’t gaining or losing too much weight.

Education needed for a career in culinary nutrition

So how did Miguel become a Culinary Nutrition Specialist? He went to school for two years and got an associates degree in culinary arts.  Then he went for two more years to learn about culinary nutrition.

“A lot of dieticians today know nutrition, but they don’t know food, so there’s a disconnection,” explains Miguel.  He not only makes food that is nutritious for the baseball players, he also makes it taste good.
